Here´s how classes work:
Classes are pretty similar to occupations, yet quite different. Occupations are the things you are really good at, such as spying or healing. However, a class is a more direct approach on your character, influencing on your character´s body type (a bit), muscle growth and height in some cases. It is what others would call your combat specialty. They also give out passive bonuses (P.U.s) from level 23 and on, up until reaching the cap level of 150.
They all work the same, but their P.U.s are added to different stats, resulting in different approaches. Also, they have certain types of weapon that they are good at, and will be at a much greater disadvantage fighting with another kind of weapon (Not saying that you couldn´t use it at all, but someone from the class that uses that weapon would be much better than you with that weapon. For example, even if a Shooter and a Swordsman have the same Marksmanship and Dexterity, the Swordsman would be much less accurate and quick-witted than the Shooter if they both use guns, and viceversa if they both used swords. However, on their own, a Swordsman would be able to fare well against other classes using a gun, and a Shooter could defend himself good enough with a sword.) Note that trying to use a weapon that the other class branch uses results in a lesser penalty (using a heavy sword as a Duelist is easier than using a rifle)

Note: Choosing 2 classes by giving up an occupation slot is possible, however, if they have the same main stat/s, those will not stack.
Classes:
Fighter:
-Speedster: Luffy would be an example. A fist to fist fighter who values speed and getting barrages of fists in more than single, destructive punches. Their main stats are speed and dexterity, while their secondaries are strength and endurance. Their weapons are martial weapons such as a monk cudgel, a shaolin spade, a bo staff, or just their fists.
-Bruiser: Lucci would be an example. A close ranged fighter who drives his opponents through buildings in single hits rather than chasing them around quickly and hitting them too many times. Their weapons of choice are knuckledusters, armor gauntlets and any other blunt weapon that goes around the limbs rather than being an extension of the user.
Swordsman:
-Duelist: Brook, Cavendish and Vista are examples. A quick, nimble, dexterous swordsman who uses a weapon or more in a speedy style, aiming to get in as many cuts as they can in the shortest amount of time. Their main stats are Speed and Dexterity, while their secondary ones are Strength and Reflexes. Their weapons are usually any light blade, from katanas to rapiers.
-Pure Sword: Zoro, Ryuma while human, and Mihawk are all examples. A strong, quick-witted swordsman who could cut bullets in midair and shoot air cutting waves with more ease than he could puncture his opponents a few hundred times in 10 seconds, like his Duelist cousin does. Their weapons can go from heavy katanas all the way to the biggest zweihanders and claymores.
Shooter:
-Sniper: Usopp and Van Auger are examples. Stealthy, physically weak shooters that could put a bullet in a squirrel´s eye at 20 kilometers without even looking down the scope of the rifle (if they even had one in there in the first place). To put it simply, very skilled shooters and accurate by nature. Their weapons are usually large caliber guns that can shoot at a very long distance: rifles, rocket launchers, heavily customized handguns, basically any projectile that can be shot quite far away and a weapon that is able to make them reach said distance. Their main stats are Marksmanship and Speed, while their secondary ones are Stamina and Dexterity.
-Commando: Franky and Vasco Shot are examples. People who, despite using long range weapons, adapt their bodies to highly-demanding tasks and are often seen rushing to the battlefield, guns a´blazing. Their weapons are usually low-caliber weapons that are able to shoot loads of lead into someone without stopping to reload, such as custom handguns, machine guns, assault rifles, and the like.
Assassin:
-Shadow: Robin would be an example. Sneaky people who prefer speed and dexterity with lots of weapons at once and are very adept at improvising. Their weapons are... well, basically anything in their range of sight, but besides that, they master a melee weapon and a ranged weapon every 25 levels starting by one of each at level 1 (for example, a flintlock pistol and a knife, or at higher levels a wakizashi and sub-machine gun). Their main stats are Speed and Dexterity, while their secondary stats are Strength and Reflexes.
-Killer: Blackbeard and Magellan are examples. Strong, sturdy agents that will go through his enemies like a truck through plastic screens, using anything in their environment for that purpose. Their weapons, while being pretty much anything around them, are almost always either blunt weapons (maces, sticks, pipes) or extensions of their body that augments their melee capacity and their lethality all at once (claw weapons, inventions that shoot projectiles upon hitting someone with a punch, etc) They can fight bare-handed without any penalty as well.
Destroyer:
-Tower: Whitebeard and Kaido are examples. Huge, towering (ya get it? Tower, towering, hehehe... Alright I´ll shut up) people that could send you through five buildings just by trying to high five you. These people are probably the most resilient and strong of the bunch, but that doesn´t mean they´re slouches either, you could consider them a "Lightning Bruiser" type. Their main stats are Strength and Endurance, and their secondary stats are Speed and Dexterity. Their weapons are most likely a huge pole weapon, their own fists, or something that would pack a real punch (although, when they use it, what doesn´t?)
-Barbarian: Killer, Kid´s crewmate, is an example; could also apply to Burgess. Pretty strong and sturdy, but much quicker and skilled with large weapons that one may first think. These guys are the ones that could rip a tree from the ground, spin like a top and erase a city in the process.
-There are also two special classes: Vessels and Full Haki. Vessels are masters of Devil Fruit usage and they exploit their powers to the upmost. Full Haki give up on ever having a Devil Fruit power so that their soul is stronger, being able to use Haki much easier, learn it faster and give it better use than others. Although they don´t get any stat P.U., at level 23, then 30 and then every 10 levels they get a free Devil Fruit / Haki Power up.
P.U. Growth Table:
Level 23 - All main stats get a 2x P.U. added.
Level 30 - 50 - All main stats get +2x every 10 levels, up to level 50. Also, at level 30 and 50 their secondary stats get a +2x P.U. as well.
Level 60 - 100 - All main stats get +5x every 10 levels, up to level 100. Also, at level 70 and 90 their secondary stats get a +5x P.U. as well.
Level 100 - 150 - All main stats get +10x every 10 levels up to level 150. Also, at levels 110, 130 and 150 their secondary stats get a +10x P.U. as well.
So a level 150 character without any P.U.s other than the class ones would end up at 83x in main stats, while the secondary ones would be around 44x.
