At level 30, you may choose a Mastery. A Mastery increases your proficiency and skill in one of your three or two occupations. Thus, try to choose whatever fits your character best, and the occupation you´ll be using the most. As a side note, choosing an occupation twice will lower the required levels in 10, and choosing it thrice will do so in 20. Meaning that, were you a triple scientist, you could access Brilliant Mind´s first perk as soon as level 10, and the last one at level 130.
-Extraordinary Spy:
Level 30: You learn to walk so vulgarly that you blend in with the crowds quite easily.
Level 60: Except when being openly hostile to someone, your presence seems totally common and unremarkable. You could detect invisible presences of people of your same level or lower if you had Observation Haki.
Level 90: Your charisma increases, allowing you to get almost anywhere just by talking. It´s not that easy, but you´ll get a nice confidence bonus at the beginning, probably being liked by your interlocutors.
Level 120: It´s impossible to be recognized by any lower level character, and by any 20 levels or lower below yours spy.
Level 150: No matter the situation, if you don´t become completely and totally hostile towards someone, you´ll be a ghost to them.
-Great Doctor:
Level 30: With a glance you would know what ails someone and, as long as it is a commonly seen disease or wound, treat it accordingly.
Level 60: You are more skilled with the scalpel and the other medical tools than your fellow medics. You could do any sort of simple surgery easily, and the complicated ones in less time than others.
Level 90: You have an extensive knowledge of diseases of the mind and the body, and can treat them with ease under your branch´s capabilities.
Level 120: You know every possible term that could be coined into a medicine book, being able to recognize easily and treat properly almost any sort of injury, mental illness or disease based on branch.
Level 150: A living medical encyclopedia, you would reach the level of knowledge of the human body of a bioengineer 20 levels below you, and no disease, injury or illness will resist you.
-Musical Genius:
Level 30: You master up to three instruments, voice not included. Your accords and compositions become better than your non-master peers.
Level 60: You could hurt your listener´s ears, or soothe their minds, as you want.
Level 90: You could make your sonic projectiles mildly more powerful, or if you are incapable of shooting them, become able to do so.
Level 120: You could sing in up to three vocal tones at once, making your songs sound like a small chorus group singing rather than a single singer.
Level 150: You could improvise compositions, and write them in a couple hours.
-Brilliant Mind:
Level 30: You begin making SMILES, making these display a power of about 1/10th of a real Devil Fruit. However, SMILES have no weakness to water or Seastone, since it doesn´t change your soul, merely introducing genetic codes, raw energy and the such into the body. The type of SMILE you can make depends on branch: Physicist gets Paramecia, Alchemist gets Logia and Bio-Engineer gets Zoan types. Your SMILES will never have a power of which you do not know extensively enough. At this level, for example, they would most likely have something to do with combustion, explosions, steam, liquids, pneumatic force, and mandrills.
Level 60: Your SMILES now display about 1/4th of a real Devil Fruit´s power.
Level 90: Your SMILES now display about 1/3rd of a real Devil Fruit´s power.
Level 120: Your SMILES now display about half of a real Devil Fruit´s power.
Level 150: Your SMILES now display 75% of a real Devil Fruit power.
-Legendary Smithy:
Level 30: You are able to make any sort of metallic item, based on your branch, with Ryo Wazamono quality this early on. For example, a Ryo Wazamono katana could weigh more than a normal one and have a sharper edge, allowing one to launch heavy artillery assaults with wind cutter techniques; while a Ryo Wazamono shield could be constantly vibrating and thus would repel attacks better and pierce through flesh and bones with its enhanced-by-vibration edge.
Level 60: Your items would still be Ryo Wazamono, but may now display two special abilities of low power, instead of one as before.
Level 90: Your items are now O Wazamono grade, and display a single, mildly powerful ability, such as the power to burn in small flames at the user´s will or a VERY sharp edge.
Level 120: Your items are now Saijo O Wazamono grade, being utterly indestructible and featuring a powerful ability, such as engulfing in enormous flames every slash, enhancing range and damage immensely, or a similar special power.
Level 150: Your items are now above Saijo O Wazamono grade, being able to either destroy formerly indestructible items, have two special powerful abilities, or a supreme ability (such as generating enormous columns of fire while aiming to the ground and titanic scorching slashes otherwise) A weapon like these would be compared to Mihawk´s Kokuto Yoru.
-Master Woodcrafter:
Level 30: Your crafts are tougher and lighter than other carpenters´
Level 60: Your crafts are as tough as forged steel already.
Level 90: You could work Adam´s wood, turning your weapons or ships into the O Wazamono equivalent of wood.
Level 120: Your Adam´s wood items become indestructible.
Level 150: You could build another Noah or make a Pluton equivalent of a wooden mass destruction weapon.
-Magnificent Cook:
Level 30: Your knowledge on ingredients and methods are much superior. You can make great dishes in relatively short time.
Level 60: You know the kitchen´s "aura" so well, you could detect one in a 50 meter radio because of the smell, heat, the sound of knifes cutting things rapidly... You could also figure out the obstacles between you and it, without much detail.
Level 90: You could cook for 10 people in under 20 minutes. Your skill with knifes is unearthly.
Level 120: You could take temperatures of up to 200 Celsius degrees without suffering any damage.
Level 150: Your food has no equal, and you handle knifes as an extension of your body.
-Court Buffoon:
Level 30: Your skill, whatever pertaining branch it may belong in, is greatly increased.
Level 60: Your knife juggling is more precise, and your acting and lying are more deceiving.
Level 90: You could make people believe all sorts of stories, or most, depending on the receiver´s audacity.
Level 120: Your acting could distract any character 20 levels below you without a doubt or choice, but anything beyond and they´d have to be genuinely interested to allow themselves the distraction.
Level 150: You could juggle claymore blades were you strong enough. Your lies are almost impossible to detect.
-Known Historian:
Level 30: You understand 20% of what a Poneglyph says.
Level 60: You could read up to 1/3rd of a Poneglyph and, applying contextual translations, up to half of it, with lots of room for mistakes.
Level 90: You could read up to half a Poneglyph and, by context, 80% with a lot of room for mistakes.
Level 120: You could read up to 80% of a Poneglyph, but the other 20% could be anything. You could also try to make out the other 20% by context, but you could fail as easily as you could accurately read the rest.
Level 150: You could read any Poneglyph, including Road Poneglyphs, in a jiffy and transcribe them to English in a couple minutes.
-Navigation Lord/Lady:
Level 30: Your ship is like a home to you, and you know perfectly well what kind of weather the mainly known islands in the Blues and the first bits of Paradise would have.
Level 60: You could make approximate estimations for an island´s sketch map while including it´s weather in the map´s corner.
Level 90: You could navigate your way from island to island just by guiding yourself out of the star´s positions.
Level 120: You could guess the approximate weather of an island in five minutes of observation.
Level 150: It´s impossible for your ship to suffer any damage as long as you´re the one on the steering wheel.
-Major Tailor:
Level 30: You sew clothes with greater speed and quality than any other common Tailor your same level.
Level 60: You could make your clothes out of metals if you previously couldn´t, and increase the range of metals available if you already could.
Level 90: Your techniques allow you to make extremely light clothes out of very heavy materials. You could sew clothes out of things like stone if you wanted to.
Level 120: You can make strings out of any sort of solid material and make clothes with them
Level 150: You could use liquids (which will solidify in the process, either in a frozen or gel-like way) to make clothes.
-Skilled Engineer:
Level 30: You could make ridiculous things, such as a fist-sized remote control vehicle that explodes with the power of a human-sized TNT box.
Level 60: Any damage from explosions and shockwaves, shrapnel and fire caused by those of lower level than you is negated. Basically, no aspect of a lesser explosion is able to hurt you. An equal level or higher level foe will affect you as always, though.
Level 90: You could make robot parts to cover almost any functions (like giving mechanical arms to a car so that it can go up cliffs.)
Level 120: With a simple look you would know some weak points of a structure, and a full analysis would reveal every single one.
Level 150: You could make things as ridiculously powerful and well planned as an angel-shaped explosion that would destroy an entire city while leaving some strategic points out of the blast radius somehow. If you wanted to, you could emulate another Engineer branch (you will be considered level 90 at it)
-Extraordinary Spy:
Level 30: You learn to walk so vulgarly that you blend in with the crowds quite easily.
Level 60: Except when being openly hostile to someone, your presence seems totally common and unremarkable. You could detect invisible presences of people of your same level or lower if you had Observation Haki.
